About Us


Established in 1991, Brook's Delectable Chocolates began as a family business in the Toronto area (rural Stouffville), whose goal was to make a truly extravagant gourmet chocolate almond brittle. Thick, imported milk or dark chocolate, generously laced with sweet, roasted whole almonds, surrounding a butter brittle centre - it is a confection of extremes, supporting the premise that if you are going to eat sweets, make it worth your while. Eat extravagantly!  The basic recipe has remained the same over the years, but the scale of production has increased dramatically. It continues to be a cottage industry, with Brook now joined in the kitchen by her younger daughter, Teegan.
During her 30 years of chocolate almond brittle production, Brook has exhibited at numerous shows and festivals, chief among them:
 
  • Toronto One of a Kind Christmas Show and Sale, since 1992
  • Toronto One of a Kind Spring Show and Sale, since 1993
  • Ball's Falls Thanksgiving Festival, since 2003  (Jordan, Ontario)
  • Beyond Craft, Latcham Gallery, since 2009 (Stouffville, Ontario)

 

Brook was born in California and lived all over the United States before moving to Canada.

Before she was incarnated as "the chocolate lady," she studied piano at the New England Conservatory of Music in Boston receiving a Bachelor of Music Degree in Performance; then went on to graduate school at the Institute of Child Study, University of Toronto.  She taught primary grades and music for the Toronto Board of Education before homeschooling her own two children.

She is a triathlete, avid gardener, yoga enthusiast, woodworker, and environmentalist.
